The last few days I have consumed a decent amount of fruit, but I’ve struggled with vegetables. My mom had a lot of bananas and mixed fruit bowls at her house, so I ate of lot of that for a couple days. Yesterday, back at home, I didn’t get my five. I did get to the store last night, though, so today…I’m about to make some taco seasoning to mix with some leftover chicken and black beans over a taco salad, probably two servings of veggies there. I’m hoping to finally make the chicken fried rice that was delayed by the whole Thanksgiving craziness this week. It’s a little hard to picture what the veggie density of that will be.
