Microwave Mug Cake
I’m the only person in my house who eats much cake. I like to bake cakes, but then I end up eating the whole thing by myself. Bad news. The other day I ran across a recipe for a single-serving microwave cake. The first time I made it…ugh. I didn’t mix it well, so I had nasty dry chunks. I also overcooked it, which is never good with microwave food–this got all rubbery. I tried again today, and…much better. Not amazing, but pretty good. For the amount of work it took, combined with the inability for me to get another piece, it’s a keeper. I adapted the original recipe a little bit. You could mix this all in the mug, but I found it’s pretty hard to mix well in the small space. The extra effort required to mix in a mug pretty much offsets not having to clean a separate bowl. Also, the measurements are in odd units because this way it only takes two measuring spoons.
Microwave Mug Cake
In a small bowl, mix
- 4 tbsp flour
- 1/4 tsp baking powder
- 2 tbsp cocoa
- 2 tbsp brown sugar
Then add:
- 3 tbsp milk
- 4 tbsp applesauce
- a little vanilla
Pour into a mug. Top with a couple tablespoons chocolate chips and stir just a little bit (so the chips don’t all settle to the bottom). Microwave for one minute. If it doesn’t look done, microwave up to one more minute. The top might be a little rubbery, but underneath should be some chocolaty goodness.
